The Birthplace of Coffee
Ethiopia is widely regarded as the origin of coffee, with a history that dates back over a thousand years. Legend has it that a goat herder named Kaldi discovered coffee after noticing that his goats became particularly energetic after eating berries from a certain tree. This serendipitous discovery led to the cultivation and celebration of coffee, eventually spreading its magic around the world.
Unique Growing Regions
Ethiopia’s diverse landscapes and climates contribute to the distinct flavor profiles of its coffee. Our Neja Fadil Coffee farms are strategically located in some of the country’s most renowned coffee-growing regions, including Sidamo, Yirgacheffe, and Harrar. Each region imparts its unique characteristics to the beans:
- Sidamo: Known for its balanced flavors with bright acidity and floral notes, Sidamo coffee often features hints of citrus and berries, making it a favorite among coffee enthusiasts.
- Yirgacheffe: This region produces some of the most sought-after beans in the world, celebrated for their sweet, fruity flavors and aromatic qualities. Yirgacheffe coffee is often described as having notes of jasmine, lemon, and blueberry.
- Harrar: Harrar beans are renowned for their bold, wine-like flavors with complex fruity and spicy undertones. They often exhibit a heavier body and a distinctive berry-like aroma.
The Art of Cultivation
At Neja Fadil Coffee, we honor traditional Ethiopian farming practices while integrating modern techniques to ensure the highest quality beans. Our farmers employ sustainable and organic farming methods, fostering a harmonious relationship with the environment. Here’s a glimpse into our cultivation process:
- Hand-Picking: Coffee cherries are hand-picked at their peak ripeness, ensuring only the best cherries are selected. This labor-intensive process is a testament to the dedication and expertise of our farmers.
- Natural and Washed Processing: Ethiopian coffee is typically processed using either natural (dry) or washed (wet) methods. Natural processing involves drying the whole cherries under the sun, enhancing fruity and wine-like flavors. Washed processing, on the other hand, removes the cherry pulp before drying, resulting in cleaner and brighter flavors.
- Drying and Sorting: After processing, the beans are meticulously dried on raised beds, allowing for optimal air circulation. They are then sorted by hand to remove any defects, ensuring that only the finest beans make it to your cup.
